Ingredients:
- 3 cups of pinto beans
- 1 tbsp cumin
- 4 tbsp salt (adjust for taste)
- 2 tbsp pepper
- 1 onion (any kind)
- 1/4 cup vegetable oil
Directions:
- Wash your pinto beans
- Soak pinto beans in enough water to cover overnight (at least 3-5 hrs)
- Drain beans and add to instant pot
- Add 3 cups of cold water to beans
- Add all ingredients to the pot (add onion peeled and cut in halves)
- Set the instant pot to manual and cook for 40 minutes
- Let instant naturally release for 10 minutes prior to venting
- For best texture I use a potato masher to mash 1/4 of the beans in the pot, just dont crush all of them
