Grandma Tano’s Mafa Chicken

Ingredients:

  • whole chicken
  • 1/2 cup white sugar
  • 1/2 cup shoyu (soy sauce)
  • 1/4 sake (japanese rice wine)
  • 1 tsp ginger powder
  • 1 tsp garlic salt
  • 5 cubes of funyu (Fermented bean curd)
  • 1 whole egg

Instructions:

  1. Take all ingredients to create the marinade
  2. Cut chicken into bite size pieces and cover in marinade. Let marinate overnight or minimum of 2 hours.
  3. Drain the chicken
  4. Lightly flour all pieces
  5. Preheat cooking oil in a deep fryer/pan/pot to 375F
  6. Cook until golden brown and internal temperature of 165F
