Clam Sauce

  • 1/4 cup extra virgin olive oil
  • 3 cans of diced clams with juice
  • 1/2 tsp italian seasoning
  • 3 cloves of garlic
  • chili flakes to taste
  1. Bring a medium sauce pan to a medium heat
  2. Add extra virgin olive oil to the pan
  3. Mince the garlic and add to the pan and slowly saute until slightly golden (be careful the heat is not too high and watch garlic as it can burn easily)
  4. Add the italian seasoning and chili flakes to the oil and allow to become fragrant
  5. Separate the juice from the clam meat
  6. Add the clam juice to the pan and bring to a simmer
  7. Cook sauce for 10 minutes and toss with any cooked pasta
  8. Serve with grated cheese
