Navajo Beans (Instant Pot)

Ingredients:

  • 3 cups of pinto beans
  • 1 tbsp cumin
  • 4 tbsp salt (adjust for taste)
  • 2 tbsp pepper
  • 1 onion (any kind)
  • 1/4 cup vegetable oil

Directions:

  1. Wash your pinto beans
  2. Soak pinto beans in enough water to cover overnight (at least 3-5 hrs)
  3. Drain beans and add to instant pot
  4. Add 3 cups of cold water to beans
  5. Add all ingredients to the pot (add onion peeled and cut in halves)
  6. Set the instant pot to manual and cook for 40 minutes
  7. Let instant naturally release for 10 minutes prior to venting
  8. For best texture I use a potato masher to mash 1/4 of the beans in the pot, just dont crush all of them
